All Things Fruity | Smoothies, Cupcakes and Fruit Cake!

Hello and Welcome back to,

Gossip & Giggles with T!

It has been a long time since I last set foot in the kitchen. Like you all know I normally I leave it all up to my mum. Recently I have noticed that we have been throwing away a lot of fruit. It’s not because we don’t eat it – it’s just because there is too much. So I decided to do something about that.

1. A Berry Smoothie!

What you will need:

2x Banana
1 handful of Grapes
1 handful of Blueberries
1 handful of Raspberries
6x Strawberries
1x Strawberry Activia yoghurt
250ml Semi-Skimmed Milk

Blender, Knife and Glass/Cup

Step 1: Chop up your fruits. Doing this will make the blending process a lot quicker and easier. I also like to chop them all up quite small.

Step 2: Add the Grapes, the Raspberries, and Blueberries to the blender. Then add half of the bananas. Once that is in pour half the milk into the blender. Then add the Strawberries and the rest of the Bananas. After that, pour the rest of the milk in and top it off with the yoghurt.

Step 3: Once all the ingredients are in, blend the mixture. I prefer bits in my smoothie, so blend until you are satisfied.

Step 4: Pour the mixture into your cups/glasses, and enjoy!

2. Strawberry Cupcakes!

What you will need (9 Cupcakes):

Cupcake Mixture:

50g Butter
50g Caster Sugar
50g Self Raising Flour
1 Egg
1 TBSP Baking Soda
1 TBSP Vanilla Essence
5 Strawberries

Butter Icing Mixture:

100g Butter
200g Icing Sugar
1TBSP Milk
1TBSP Cocoa Powder

Preheat the oven to gas mark 4 and place the 9 cupcake case onto a baking tray!

Step 1: Place the Butter and Caster Sugar into a large mixing bowl. Mix the two together until you get a smooth and fluffy texture.

Step 2: Crack the egg and beat it in a separate bowl. Once that is complete gradually add the egg and flour to the mixture in a large bowl. I add a 1/3 of the egg and the flour, then mix and repeat this process.

Step 3: After the four ingredients are mixed together well and there are no lumps, add the Vanilla essence and baking soda. Remember to mix well so that it is evenly covered.

Step 4: You can now add the mixture to the cake cases! Don’t fill the cases up to the top because they will rise when they are cooking!

Place the cakes in the oven and leave to bake for 12-15 minutes!

Whilst they are cooking you can begin to make your butter icing to do these you’ll need to:

Step 1: Add 100g of butter and 100g of icing sugar to a large bowl. Mix until it is smooth.

Step 2: Once the mixture it smooth, add the milk and the rest of the icing sugar. Continue to mix the mixture unit it is smooth and thick. 

If you want Chocolate Butter Icing – I took 1/3 of the mixture and added 1 TBSP of Cocoa Powder. Mix the cocoa powder until it is all covered.

Remember to cover the mixture once this is done to avoid flies as you will now have to wait for the cakes to be done.

Step 5: When the cakes are done leave them to cool. Now use the 5 strawberries you have and cut them in half. Each cupcake will have half of a whole strawberry. Cut that half into half again. That way the slices won’t be too big for the cake.

Step 6: Once the cakes are cool, using a TBSP place a dollop of butter icing on the center of the cupcake and use the bottom of the spoon to spread it, make sure it is evenly spread.

Step 7: Then add 2 slices of strawberries to the top of each cupcake!

3. Strawberry and Raspberry Fruit Cake!

This recipe is extremely simple and almost identical to the making of the cupcakes!

What you will need:

100g Butter
100g Caster Sugar
100g Self Raising Flour
2 Eggs
2 TBSP Baking Soda
2 TBSP Vanilla Essence
12 Large Strawberries
15-20 Raspberries

150g Butter
300g Icing Sugar
1TBSP Milk

Preheat the oven to gas mark 4 and grease your dish!!

Step 1: Place the Butter and Caster Sugar into a large mixing bowl. Mix the two together until you get a smooth and fluffy texture.

Step 2: Crack the eggs and beat it in a separate bowl. Once that is complete gradually add the egg and flour to the mixture in a large bowl. I add a 1/3 of the eggs and the flour, then mix and repeat this process.

Step 3: After the four ingredients are mixed together well and there are no lumps, add the Vanilla essence and baking soda. Remember to mix well so that it is evenly covered.

Step 4: Chop 6 of the strawberries until they are in small chunks, and cut half of the raspberries in half. Then, add these all to the mixture. Avoid mixing it in because you’ll end up with it being juicy. Fold the mixture instead! This way it will all be covered and Once the cake is ready you’ll end up with chunks of fruit instead.

Then pour the mixture into your greased tray and place in the oven for 20-25 minutes. Remember to check on it to avoid it burning and you’ll know it’s cooked when there is no liquid inside. You can check this by sticking a knife into the center of the cake!

Like the previous recipe, whilst the cake is baking you can begin to make your butter icing to do these you’ll need to:

Step 1: Add 150g of butter and 150g of icing sugar to a large bowl. Mix until it is smooth.

Step 2: Once the mixture it smooth, add the milk and the rest of the icing sugar. Continue to mix the mixture unit it is smooth and thick.

Step 5: Leave the cake to cool, and whilst you do cut the remaining strawberries into quarters and raspberries into halves!

Step 6: Once they are cut and the cake is cool begin to cover the top of the cake with the butter icing. Again, remember to evenly spread the mixture over the cake.

Step 7: Lastly, add the chopped fruits to the top of your cake!
