I have been craving Banana’s for quite some time, but I have noticed the more you eat of them the more sickly they become. I didn’t want to go off them so instead, I decided why not make a Banana cake?

- 2 Banana’s
- 100ml Olive Oil
- 150g Caster Sugar
- 1 large egg
- 1 TSP Baking Powder
- 200g Self-Raising Flour
- 2 TSP Mixed Spice
- Sprinkle of Icing Sugar
Step 1) Pre heat the oven to Gas Mark 4, and grease your dish with butter.
Step 2) Put your two bananas in a large mixing bowl and mash them up. Once they begin getting mushy add the caster sugar. Continue to mix and mash the two ingredients together.
Step 3) Once they are mixed together, beat the egg in a separate bowl and then add that to the large bowl along with the Self-Raising flour, Baking Powder and Olive Oil. Mix the ingredients together until you get a smooth, runny texture.
Step 4) This step is optional, but if you would like a bit of spice in your Banana cake then add the Mixed Spice to the mixture and mix it all together.
Step 5) Pour the mixture into the dish and place it on the middle shelf of your oven for 20-25 minutes or until there is no residue on a knife when you put it in the cake.
Step 6) Once baked, take it out the oven and leave it to cool in the dish. Once cooled, place it on a plate and sprinkle some icing sugar on top!
Although I slightly over cooked mine, it still tastes just as goo and some may think that without butter may affect the texture of the cake. But it is still just as moist as any normal cake!
