- 200g Caster Sugar
- 200g Butter
- 200g Self-Raising Flour
- 3 large Oranges
- 3 Eggs
- Teaspoon Vanilla Essence
Step 1: Pre-Heat the oven to Gas Mark 4, and grease the baking tin.
Step 2: Mix together the Butter and Sugar so that you get a creamy texture.
Step 3: Cut the Oranges in half and scoop out the Orange. Put the Orange in a blender and blend for a couple of minutes.
Step 4: Beat the Eggs and then gradually add them and the Self-Raising Flour to the mixture. Once the four ingredients are mixed together add the Vanilla Essence and the blended Oranges and stir it making sure it is evenly spread.
Step 5: Pour the mixture into the baking tin and cook for 25-30 minutes. Keep an eye on it to make sure it doesn’t burn. If the cake is golden but it’s still runny in the middle – cover it with tin foil!
Butter Icing –
- 250g of Icing Sugar
- 120g Butter
- 2 TBSP Cocoa Powder
Mix 125g of Icing Sugar and the Butter together. Keep mixing until you get a creamy texture.
Then add the remaining Icing Sugar – Doing so thickens up the creamy texture. Depending if you want it to be chocolaty or not, add it to the mixture.
Whilst the cake is cooking put it in the fridge to keep chilled.
When the cake is cooled add the butter icing on top!
