My latest addition to my collection of Quick and Easy Dinners is a Pasta and Vegetable dish. You can really make this meal a number of ways, by adding a sauce or different vegetables, but this is my favourite. It’s not too heavy and it’s not too plain, but it is delicious!
1/2 Green Pepper
1/2 Yellow Pepper
1 Garlic Clove
1 tablespoon Olive Oil
Step 1: Put a pan of water on the hob, on a high heat and add the Penne pasta. About 2 handful of pasta will be plenty. Stir the pasta occasionaly to avoid it from sticking, adding a table spoon of olive oil also helps!
Step 2: Whilst the pasta is cooking you’ll want to chop up your vegetables – you can pretty much add any veg, but I recommend Peppers, Garlic, Tomatoes, Spring Onions, and Onions.
Step 3: You’ll then need to add your vegetables to a nonstick skillet, and allow them to cook. Remember to keep stiring the vegetables so they don’t burn. This will take about 10 – 12 minutes on a medium to high heat.
Step 4: Once the vegetables are cooked, you can then make the decision on whether you want to add sauce or not. If you do you’ll want to add a tin of chopped tomatoes to the vegetables and leave to simmer for about 3 – 5 minutes, on a medium to low heat.
Step 5: Once the pasta is ready and you can tell by tasting it and it will be soft, you’ll want to drain the pasta, and add it to the vegetables. Make sure you stir it in nicely so that all the vegetables are evenly spread throughout before dishing up!
What I love about this meal is that it that you really can tailor it to suit yourself. You can add a sauce or add different vegetables, it’s entirely up to you! It only taking 15-20 minutes to make is simply a bonus.
